Sazerac recipe

The Sazerac is a New Orleans classic: rye, sugar, Peychaud's bitters, and an absinthe rinse. It is served with no ice.
  • Spirit: Rye
  • Glass: Rocks glass
  • Garnish: Lemon peel
  • Makes: 1 drink
Sazerac cocktail in a rocks glass

Ingredients

  • 2 oz Rye whiskey (or bourbon)
  • 1 Sugar cube (or 1 tsp simple syrup)
  • 3 dashes Peychaud's bitters
  • 1 tsp Absinthe, for the rinse
  • 1 Lemon peel, for garnish

Method

  1. Fill a rocks glass with ice and water to chill it.
  2. In a mixing glass, crush the sugar cube with the bitters and a few drops of water.
  3. Add the rye and fill the mixing glass with ice. Stir for 30 seconds.
  4. Empty the rocks glass. Pour in the absinthe and turn the glass to coat the inside. Discard the extra.
  5. Strain the drink into the glass. Express the lemon peel over the top. Drop it in or set it aside.

Tips

  • The absinthe is a rinse, not an ingredient. A teaspoon is enough.
  • Serve it with no ice in the glass.

Best rye for the Sazerac

Rye is the traditional base and brings the spice that the anise rinse needs. A rye at 100 proof or higher works well.
